Denise's Black Beans
(Taken from Once-A-Month Cooking)

Crock pot
1 pound smoked sausage cut into pieces
3 15 oz cans black beans, drained
1 1/2 c chopped onion
1 1/2 c chopped green pepper
1 1/2 c chopped celery
4 tsp minced garlic ( 4 cloves)
2 tsp dried thyme
1 1/2 dried oregano
1/4 tsp cayenne pepper
1 chicken bouillon cube
5 bay leaves
1 8oz can tomato sauce
1 c water

Combine all ingredients in a crock pot. Cook on low for 8 hours. Remove bay leaves.
Serve over hot cooked rice or in flour tortillas. Freezes well.
